Cake

i love it. i don't think i get enough, so i started a new policy for my branch. whenever someone has a birthday, i'm baking a cake. yesterday was my assistant's birthday, so a cleverly asked her a few weeks ago what her cake preferences were. white cake, white frosting. she is a bit weird when it comes to food, so i rolled with it.

i didn't have any layer cake pans, so i had to use a cheesecake pan. this kind of screwed up the cooking times/temp, so it didn't come out as well as i hoped. i am also a bit out of practice since it has been over ten years since the last time a baked a layer cake, Mt. Dew in '97. that one netted me a future exwife.

anyways this one turned out okay, but not as moist and delicious as i wanted. i'll have to practice before the next birthday in april. that means more cake!

Sarah can throw down a mean cake. She makes them for her friends and stuff, I'm not overly fond of cakes.

i figured out why make cake was a failure or sorts. i forgot to add 1.33 cups water, which would explain why it was so thick, and not moist.

i made a batch of cupcakes last night and they turned out great! i forgot to bring them to work today. hopefully i won't eat all of them when i get home tonight.

my specialty and all time favorite would have to be muffins. mmmmmmmmm muffins. K brought home this delicious cake this weekend, it was called red velvet. mmmmmm red velvet!!! cheese cake icing and moist red cake. mmmmmmmm. Delicious!!!

another employee's birthday, another batch of cupcakes. this time i made the butter cream frosting from scratch.


to transport them to work i cover the platter with saran, toothpicks in the cupcakes to keep the wrap off of the icing. While eating my cupcake this moring i got a splinter in my lip from licking the icing off of the toothpick. I'm not exactly sure how to go about getting that out.

i fucked up a cake last night. i whipped the batter by accident b/c i wasn't thinking. though, the whipped raw batter was glorious, it doesn't bake. i'm guessing the air creates an insulation that prevents the centre from ever getting hot enough. i kept it in almost twice as long, and the middle was still raw.


i'm at home now baking another. PRIORITIES!

It seems no matter how much red food coloring you put in white frosting, it will just stay pink.

in hindsight i should have done a white and red layer/halved, so there are four strips, and blue frosting with white star sprinkles on top.

You need food colouring specific for icing: like this.

I could/would eat cake every single day. I don't care what flavor it is, what color it is, whether it's made from cheese, chocolate, carrots, or upside down pineapples. Layer, cup, bundt, whatever. I like it right out of the oven, room temperature, and nice and cold where the icing turns fudge-like. I'll eat it under ice cream whipped cream, butter cream, ganache...

That's lovely.

I've just learned my step sister does extremely intricate little flowers and things. She made a cake for my mother's birthday and it was beautiful.

a colleague axed me to make a cake for him for his wife's birthday this week. it's greatness lies in its simplicity. i made a simple strawberry puree' sauce, mixed half in with the cake batter(marble failed), and saved the other half for the filling. the fresh vanilla buttercream frosting had the little black vanilla bean flecks throughout, signifying that only the best ingredients were used.
